ABSENCE OF AIR	For Yeast to respire anaerobically to produce Carbon Dioxide and Ethanol, Oxygen needs to be absent
OPTIMUM TEMPERATURE	Optimum temperature is needed to prevent the denaturation of enzymes, therefore creating an optimum environment that increases enzyme activity
